IT'S 73% OLEIC ACID

The main fatty acid in olive oil is oleic acid — a monounsaturated fat that your body genuinely loves. It's been linked to reduced inflammation, better heart health, and lower blood pressure. The Mediterranean diet has been the most studied diet on earth for decades. Olive oil is its cornerstone. Coincidence? Probably not.

THE POLYPHENOLS ARE THE POINT

Polyphenols are the natural antioxidants found in extra virgin olive oil. They fight oxidative stress, support your immune system, and are the reason real EVOO tastes peppery and bold. Cheap olive oil has almost none. Refined, blended, old, or badly stored oil loses them fast. Fresh harvest, cold-pressed, stored right — that's how you keep them. That's what we do.

NOT ALL OLIVE OIL IS THE SAME

"Extra virgin" is the highest grade — it means cold-pressed, no heat, no chemicals, under 0.8% acidity. Everything below that is refined, processed, or a blend. Most olive oil on supermarket shelves is neither fresh nor single origin. It's a commodity. We made something better.

STORE IT LIKE IT MATTERS

Because it does. Heat, light, and air are olive oil's enemies. Dark bottle, cool cupboard, away from the stove. Use it within 12 months of harvest. Ours comes with a harvest date. Because freshness isn't a bonus - it's the whole point.
